veggie soup

One of the greatest kitchen time-savers is the crockpot. The beauty of it is that you can cut up all your ingredients and throw everything in the night before. Then by tomorrow, you’ll have a lovely soup waiting for you.
Our favorite soup is the simplest.
- chicken bones/carcasses
- celery, cut to 2 inch pieces
- carrots, cut in chunks
- tomatoes, cut in quarters
- onions, cut in quarters
- water
Basically everything goes in the crockpot and simmers slowly overnight.
Before serving, I typically season with salt, lots of pepper, and I also throw in a cube of chicken stock for added taste.
It’s just this simple but it makes a refreshing soup, great with rice, for a hot sunny afternoon.
